2 minutes read time

Ingredients:

  • 2 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 small tomato, diced
  • 2 tablespoons diced red onion
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper to taste
  • 2 slices of keto-friendly bread (such as almond flour bread or coconut flour bread)
  • Cooking oil or butter for frying the eggs

Instructions:

  1. Start by preparing the guacamole. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  2. Mash the avocado using a fork until you achieve your desired guacamole consistency.
  3. Add lime juice, minced garlic, diced tomato, diced red onion, chopped cilantro, salt, and pepper to the mashed avocado. Mix well to combine all the ingredients. Adjust the seasonings according to your taste preferences.
  4. Heat a skillet over medium heat and add a small amount of cooking oil or butter.
  5. Toast the slices of keto bread in the skillet until they are lightly golden and crispy. Remove from the skillet and set aside.
  6. In the same skillet, fry the eggs to your desired doneness (e.g., sunny-side-up, over-easy, or scrambled). Season with salt and pepper.
  7. Once the eggs are cooked, place one fried egg on top of each slice of toasted keto bread.
  8. Spoon a generous amount of guacamole on top of each egg.
  9. Optionally, garnish with additional diced tomatoes, red onions, or cilantro for added freshness and flavor.
  10. Serve the eggs on guacamole on keto bread immediately, while the eggs are still warm and the guacamole is fresh.

This recipe combines the creamy and nutritious goodness of guacamole with the protein-packed eggs, all served on a keto-friendly bread option. It makes for a satisfying and flavorful breakfast or brunch that aligns with a ketogenic diet. Enjoy!
